Hello, my little pasta lovers! We all know that our readers are special (and awesome too šŸ˜‰), thatā€™s why we prepared special pasta today, itā€™s called MLINCI or roasted pasta! Roasted pasta is really rare to find on plates worldwide, so letā€™s change that and learn this easy recipe. Letā€™s get it on!

What is roasted pasta (Mlinci)?

Roasted pasta is homemade in Croatia once again, and itā€™s mostly made at home. Store bought roasted pasta just isnā€™t a thing, partially because itā€™s really easy to make (and fun too). Because great things always go in pairs, itā€™s traditionally paired with the classic Sunday roast (chicken, pork, lamb), but can go as a side dish itself. In the past it was made on a fire stove, but you can make it on your home oven with ease. The best thing is, as always with pasta, you can store it for a longer time (on a dry and cool place), and just quickly cook it whenever you need. It is cooked as normal pasta in hot water, but it needs just a few minutes, thatā€™s why you need to be careful while cooking. Traditionally it is poured over with roasting sauce! YUM YUM!

How to make roasted pasta (Mlinci)?

1. First take out your white powder (yea, I know, I like the term), salt it evenly, break your eggs (not your husbands) and mix it altogether. Give it a really good knead, it needs to be medium tight (have a little softness to it), if itā€™s to dry, just add a few drops of water to it.

2. When the dough is ready take out your pasta machine (you can thin it out by hand if you want, my little Terminator), cut the dough in similar pieces (about 10 pieces) and thin it out with the machine. If you can see your fingers on the other side of the pasta, itā€™s perfect.

3. Now take out your dishcloth (it would be great if itā€™s has no smell, even the nice ones like waterlily or rosewater, because your pasta will have the same scent and we do not want that!) and place the pasta on it evenly.

4. When your pasta is all thinned, heat up your oven on 200 Ā°C (400Ā° F), place the pasta on a baking tray (with a baking paper) and roast it until golden brown (it takes just a few minutes depending on your oven, mine takes 5 minutes exactly).

The roasted pasta needs to have air pockets and, most importantly, it needs to be bone dry (if it isnā€™t it can get moldy when stored for a longer time).

5. Repeat the process until youā€™re finished. Store it in a cool and dry place (in a paper bag).

Quick cooking instructions

  1. Mix together the flour, salt and eggs, knead it (till your stress level is back again to normal).
  2. Cut the dough in similar pieces (about 10) and thin it out. Place the pasta on a neutral dishcloth.
  3. Heat up your oven on 200 Ā°C (400Ā° F) and place the pasta on a baking tray (with baking paper)
  4. Roast it until golden and bone dry (about 4-5 minutes).

Cooking and serving

Now you made them, but how do you cook them? Just like any other pasta! Boil your water and season it with salt! Before you put them into the boiling water just roughly break your roasted pasta with your bare hands (you little Hercules) into smaller pieces. Cook it about 5-10 minutes, depending on the thickness of your pasta. When ā€œal denteā€ remove them for the water and they are ready to serve. You can also put them directly into the roasting sauces from your delish Sunday roast. Great right?
