Hello my little pasta gang! For this recipe you need to have some balls (or eggs) because we’re making something even my nonna doesn’t like to talk about! We lured her with some homemade biscuits and a good cup of (rum) tea, and now we have the recipe. Was it worth it? The answer is yes (was it morally wrong? Maybe.), because today you’ll learn how to make spaghetti without a machine (except your cute little hands). Now throw away your machine, kiss your nonna or make her some (rum) tea, take out your cute little hands, and lock your children (not literally, just an expression here!) and let’s do the spaghetti!
What is the traditional way of making spaghetti?
You want it the hard way (and the true way)! You want to know the story of the first spaghetti ever made, sent from spaghetti-heaven with the help of the magic spaghetti octopus monster? Well, truth is spaghetti was hard work, before the massive industrial shift, but so was life. Machines were invented, mothers, even grandmothers we’re happy to not mess around with spaghetti the whole day, but to fill the new extra time with a neighbourly love affair. But today, we are going back to the roots and learning how to make spaghetti without a machine! Traditionally spaghetti was made only by hands (sometimes with a iron-like-mesh) and it took some good time and practice, but we’ll make it a little faster.
What ingredients to use for your spaghetti pasta?
First take the best eggs you can find for the recipe! The quality of eggs is crucial for any pasta. The eggs need to be (if you can) homegrown, free range, yellow, fresh, organic, good! That’s the basic for every good pasta. The flour can be semolina, 00, or yes, even all-purpose (we’ll forgive you, but, truth be said, we make pasta often with all-purpose flour, and it’s great, sooo …)
How to make spaghetti without a machine?
Now you are ready for the big step, my little pasta master! Take out your flour and mix it with a good pinch of salt and eggs. Knead the dough thoroughly and cut in same sized pieces. Now thin it out (we said no machine, so no machine, stick to your decisions). You can thin it out with your machine (if you reaaaaly want!), but we ate too much of our zebra rolls, so we need to exercise a bit. When it’s thinned out you need to roll up your pasta and cut the roll into thin strips. Now take one strip and roll it with your hands, and out some good pressure on the pasta! Repeat the process and your spaghetti will be ready in no time! Cook till al dente and enjoy!
Quick cooking instructions
- Mix the flour, salt and eggs in a bowl.
- Knead the dough thoroughly.
- Cut the dough into small same-sized pieces and thin it out (always flour your working surface).
- Roll thinned-out pasta dough and cut into same sized pieces.
- Roll it with your hands and apply some pressure on the pasta.
- Enjoy your homemade spaghetti!
Now you learned how to make spaghetti without a machine, and you can call yourself octopus-spaghetti-master. Or don’t because you’re reasonable! And as always share it if you dare it!
