We want to be honest with our darlings, you’ll need to do some preparation here (wow, I sound exactly as my middle school teacher, I guess I’m getting old …). If you’re not in the mood for filleting your organic fish (who can blame you?), you can just follow the recipe and fry your fish whole but do it in a large pan (so your fish won’t stick to your pan).

Detailed cooking instructions
1. Take out your fish and fillet it! It’s really easy with our instructions (if you’ve never done it before), or if you’re more the-I’m-the-Japanese-Kill-Bill-fish-filleting-master-type, you can do it in a few minutes.
2. Now season your fish thoroughly on both sides (with salt and pepper and a few drops of olive oil.) Now imagine the fish is your first high school crush and massage the spices evenly onto the fish (maybe not so easy to imagine but try it out). Let the seasoning soak in for the time you prepare the rest of your recipe.
3. Now take out your fresh basil leaves and prepare the quick basil oil! You have now two of the three main compounds of your dish ready my dear!
4. Now you only have to make creamy polenta! With polenta it’s really important that you serve it as quickly as possible, that’s why the timing of compounds while preparing this dish is important.
5. After you cook your polenta, take out a plate and put flour on it. Now roll the fish fillet in the flour, so the whole area is covered! This step will protect the fish fillet from sticking to your frying pan.
6. Heat up your frying pan and pour some olive oil into it. Fry the fish fillets until golden brown on both sides! The fillet is perfect when it’s still juicy on the inside with a nice crispy crust on the outside!
7. Serve the fillet immediately on the creamy polenta and pour over a few tablespoons of your homemade basil oil. If this isn’t the dish if the day, nothing is!
